Supplì is the Roman answer to Arancini. Popular breaded and fried rice balls draw from traditional repurposing of leftovers, but also tell of the various influences that introduced them in 19th century rustic dining. Their name comes from "Surprise," the French way to describe the astonishment of biting into a piping hot Italian rice ball and finding a heart of melted cheese. During our 90 minute lesson we take this surprise to the next level.
